Ingredients:
Rava/Semolina - 1 cup
Curd - 1 cup
Salt - as per taste
Water - 1 cup
Baking soda - 1/4 teaspoon
This is tried and tested recipe which makes spongy rava idlis.
If you have not gotten roasted rava, dry roast them well till they turn aromatic, say 5 minutes. But do not burn them.
Soak the rava in 1 cup of curd for about 15 minutes. Once its soaked well, add salt and water. Mix it till it comes to idli batter consistency. Finally add 1/4 teaspoon of baking soda and mix well. Your rava idli batter is now ready. Steam the idlis till they are done and enjoy with coconut chutney.
To make it a bit fancier, you may add a couple of roasted cashews.
