My husband leaves for office early, so I try to make easy breakfasts as possible. Having a toddler and making complicated breakfasts is not my cup of tea. This is one of those breakfasts made easy and quickly. Yet, it is delicious and healthy way to start your day with high protein diet. Generally I plan the menu for the coming week over the previous weekend itself and this prevents my head scratching in the morning deciding what to make.

Soak all the parupu for a couple of hours or overnight so that you can make adai for breakfast. Grind the soaked parupu well and transfer into a pot. Now add the chopped onions, green chilies, curry leaves and coriander leaves.

Add salt and mix everything well. Set it aside for 10 mins.

Warm up the dosa tava and pour a ladle full of adai mavu and pour desired oil around. Wait for few minutes till one side of adai is cooked and flip it over. Cook the other side for a few minutes and take it off the tava.

It takes good by itself or server it with coconut chutney.

If you like the taste of garlic, you may add a few garlic cloves while grinding. Also if you can handle a little more heat, add a couple of red chilies soaked in hot water during grinding.
