How to make easy coconut ladoo?

Ingredients:
Coconut - 1 cup grated
Sugar - 1/4 cup
Full cream milk - 1 cup
Salt - a pinch
Cashews - few
Raisins - few
Ghee - 1 tablespoon

Warm up 1 tablespoon of ghee in a kadai and roast cashews & raisins. Once the raisins puff up and cashews are golden brown, take them off the heat and keep them aside.

To the same kadai, now add in the grated coconut. I prefer fresh coconut, however you may use desiccated coconut if that is available. Freshly grated coconut has moisture in it and hence takes a bit longer to absorb milk during the process of making ladoo. Fry the grated coconut for about 5 minutes in low/medium flame. Do not burn them. Now pour in 1 cup full cream milk and keep stirring until all the milk is absorbed. This might take around 10 minutes at low/medium flame.

Once the milk is completely absorbed, add in a pinch of salt and 1/4 cup of sugar. Keep stirring, because the sugar will melt and make coconut runny. Now add in the roasted cashews and raisins. Keep stirring till the coconut mixture is somewhat dry. Take it off the heat and let it cool down a bit. Do not let it cool completely. Make round ladoos when its still warm.
