How to make easy lemon rice?

Ingredients:
Cooked rice - 1 cup
Lemon juice - 4 tablespoon
Lemon zest - 1/4 teaspoon (optional)
Fried Peanuts/Ver kadalai - 1 tablespoon
Mustard seeds - 1/4 teaspoon
Ulundu/Urad dhal - 1 teaspoon
Curry leaves - few
Coriander leaves - few chopped
Oil - 11/2 tablespoon
Green chilies - 2 chopped
Turmeric powder - 1/4 teaspoon
Salt - as per taste

 Cook the rice well enough, although do not make it mushy. Spread the cooked rice on a plate to cool down while we prepare the lemon mixture.

In a kadai, warm up the oil and add mustard seeds. Once the spurting stops add in the curry leaves and ulundu. Saute the ulundu till it starts to brown up. Add in the fried peanuts and green chilies. Saute it for a minute and pour in the lemon juice along with lemon zest (if you are using). Add in the turmeric powder and salt. Bring this to boil and let it thicken. Take it off the heat and let it cool down.

Once its cooled down, add in the cooked rice and try to coat all the rice well. Garnish with chopped coriander leaves.
