Ingredients:
Cooked rice - 1 cup
Curd - 1/4 cup
Milk - 1/4 cup
Mustard seeds - 1/4 teaspoon
Ulundu/Urad dhaal - 1/4 teaspoon
Curry leaves - few
Coriander leaves - few chopped
Oil - 1/2 teaspoon
Salt - as per taste
Pomegranate - some seeds (optional)
Green grapes - some (optional)
This is again one of the easiest dishes that anyone could make for lunch box.
I prefer the rice to be well cooked or a bit mushy for curd rice.
In a small pan warm up the oil and add in the mustard. Once the spurting stops, add the ulundu and curry leaves. Turn off the heat and let it cool down a bit.Now pour in the curd and add salt.
Now add in the cooked rice and coat it well with curd. Pour in the milk and mix well. Finally garnish the curd rice with chopped coriander leaves. You may add pomegranate seeds and green grapes to the rice, if you are using.
