Ingredients:
Roasted rava - 1 cup
Sugar - 1 cup
Ghee - 3 tablespoon
Cashews - 7
Raisins - 7
Cardamom - 2 powdered
Milk - 1 cup
Water - 1 and 1/4 cups
Food coloring - 1 drop (optional)
In a pan warm up 1 tablespoon ghee and roast cashews & raisins. Keep that aside. In the same pan, add the remaining ghee and warm it up. Add rava and saute it till it soaks in all the ghee. To this add 1 cup of sugar and mix it well. Let the flame be low else it might burn the rava.
Once rava and sugar are mixed well, pour in milk and water. I prefer white kesari, that is kesari without food coloring. However if your wish to make the usual kesari, add a drop of food coloring to the water when you add it to the rava. Keep stirring the mixture till all the liquid is absorbed and rava looks cooked. This might take 7/8 minutes.
Now add roasted cashews, raisins and cardamom powder. Since this hardens a little bit when cooled, so take it off the heat accordingly.
