Ingredients:
Rice - 1 cup
Water - 2 cups
Vegetables - of your choice. I have used potato, beans, carrot & cauliflower
Ginger garlic paste - 2 teaspoon
Onion - 1 medium thinly sliced
Tomato - 1 medium
Pudina leaves - few chopped
Coriander leaves - few chopped
Briyani masala - 2 tablespoon
Salt - as per taste
Cinnamon - 1 inch stick
Cloves - 5 nos
Cardamom - 3 nos
Bay leaf - 1
Oil - 2 tablespoon
Ghee - 1 tablespoon
Wash and soak rice for at least 30 minutes. I have used a pressure cooker to cook this briyani, however the procedure remains the same if you cook it in electric cooker too.
Add oil in a warm pressure cooker and add cinnamon, cloves, cardamom & bay leaf. Add finely sliced onions to the spices and saute till it turns transparent. To this add ginger garlic paste and saute till oil separates. Add the chopped tomatoes and cook till they become mushy. Add in the coriander & mint leaves and saute for a minute. Then add all the chopped vegetables along with briyani masala and salt. Saute all the vegetables for 2-3 minutes and pour in the water. You may now add the said ghee and let it cook for 2 whistles.
You may serve this with raitha.
