How to make easy sambar?

Ingredients:
Toor dhal - 1/2 cup
Water - 3 cups
Vegetables - chopped into cubes
Asafoetida - a tiny piece 
Mustard seeds - For tempering
Curry leaves - few
Coriander leaves - few finely chopped
Onion - 5/6 nos
Garlic - 4/5 cloves
Oil - for tempering

Wash and soak toor dhal for 15-20 mins and then pressure cook it in 1 cup of water along with small onions, asafoetida & garlic. Once cooked mash the deal and keep it aside. 

In a kadai add oil, mustard seeds, curry leaves and onion.  Once the onions turn pink, add all the cut vegetables and add sambar powder, turmeric powder and salt. To this add 2 cups of water and cover the kadai with a lid till the vegetables are 75% cooked. You may cook this over medium heat.

Once the vegetables are cooked 75% you may then add the cooked dhal and add 1/4 cup of water.

Bring the mixture to a boil or till the vegetables are well done. Top this with chopped coriander leaves and serve this will white rice.
