Ingredients:
Idli rice - 4 cups
Urad dhal (Ulundu) - 1 cup
Water - 8 cups
Wash rice and urad dhal separately. Soak 4 cups of rice in 6 cups of water and 1 cup of urad dhal in 2 cups of water. Do not strain the water in which they are soaked, for we should use them in grinding.
Soak them for good 5-6 hours and grind them separately. You may leave the urad dhal in the grinder for about half hour even if its smooth. This will make the dhal to bubble up which will result in soft idlis.
Alternatively, you may use 3 cups of idli rice and a cup of idli rava.
