Mushroom is one dish that can be replaced by vegetarians for meat. If cooked well, it might resemble the taste of non vegetarian dishes. It is one versatile ingredients which is very easy to cook and yet makes the dish very tasty.

I have quite some dishes in mind using mushroom which I shall share very soon. Since my husband is allergic to mushroom, I cook these dishes when I am at my mom's place.

In a kadai warm up the oil and once its warm enough saute the onions & curry leaves till onions turns transparent. Add in the ginger garlic paste at low to medium flame till the raw smell vanishes away. Once it does, add in the chopped tomatoes and saute for some time. Leave this on the flame till tomatoes turn mushy.

Now add in the chili powder, turmeric powder, coriander powder and salt as per liking. Mix well and add 1/2 cup of water. To this add in the chopped mushroom. Mix well so that all the masala is incorporated along with the mushrooms.

Leave this covered on a low flame till the mushrooms are cooked or till oil separates. Finally add in the chopped coriander leaves and take it off the flame.

This tastes very good as a side dish for rice or roti.
