Ingredients:
Eggs - 2 beaten
Onions - 1 medium sized finely chopped
Tomato - 1 small finely chopped
Green chilies - 1 finely chopped
Salt - as per taste
Masala - 2 teaspoon
Tumeric powder - a pinch
Curry leaves - few
Coriander leaves - few chopped
Oil - 1 tablespoon
This is an easy snack that can be had alone or can accompany roti, parotta, rice, sandwich and the list goes on.
In a small pan warm up the oil and add the curry leaves, chopped onions and chopped green chilies. Saute it till the onions are half cooked and then add in the chopped tomato. Cook this till the tomatoes become mushy and now add the masala, tumeric powder and salt. Saute this till oil separates from the pan and you end up with a thick tomato chutney.
Reduce the heat to low and pour in the beaten eggs to the tomato mixture. Mix the egg well with the mixture while the egg automatically cooks. Finally garnish the bhurji with chopped coriander leaves.
