How to make ulunda kanchi/Urad dhal/black gram porridge?

Ingredients:
Ulundu/Urad dhal/black gram - 1 cup
Jaggery  - 1/2 cup
Cardamom powder - 1/4 teaspoon
Ghee - 2 tablespoon
Cashew nuts - 6
Water - 3 cups
Salt - a pinch or as per taste

Ulundu/Urad dhal is one of the best dhals that you should include in your diet. This is one dhal which is highly recommended even to people with diabetes. You may find the nutrient values and uses here.

Wash and soak ulundu/urad dhal for about 15 mins. After 15 mins pressure cook it with 2 cups of water for 4 to 5 whistles.
Add jaggery with 1 cup of water in a sauce pan and let it simmer for 10 mins or till the entire jaggery is dissolved. Filter this syrup into the cooked ulundu/urad dhal and stir it over low flame for few mins. While this is simmering, in a small pan warm up ghee and roast a few cashew nuts. Pour the roasted cashew nuts and ghee over the simmering dhal mixture. Finally add the cardamom powder and take it off the heat.

This is a healthy breakfast that my mum used to prepare when we were kids. My mum says ulundu/urad dhal is much needed for women and used to make many such dishes. Will keep this list coming.
