How to make rava/semolina payasam?

Ingredients:
Roasted rava - 1 cup
Milk - 2 and 1/2 cups
Warm water - 1/2 cup
Saffron - 1 strand
Sugar - 1 cup
Ghee - 2 tablespoon
Cashews - 5
Raisins - 5
Cardamom powder - a pinch
Salt - a pinch

Warm up 1 tablespoon of ghee in a heavy bottomed pan and roast cashews & raisins. Set aside the roasted cashews & raisins.

In the same pan add the rest of ghee and warm it up. Add 1 cup of roasted rava to to the ghee and stir till all the ghee is absorbed well. Add 1 cup to sugar to the rava and mix well so that it does not get burnt at the bottom. Let the stove be at low/medium heat.

Pour in 2 and 1/2 cups of milk to the rava and sugar mixture. You may turn the heat up, just a little but keep stirring it so that there are no lumps. In a small bowl add warm water to a strand of saffron and wait until the water turns orange. You may pour this onto the pan where we got rava, sugar & milk. Keep cooking the payasam for another 5 mins or till the milk starts to boil.

Keep in mind that this will thicken over the time when it cools, so you may take it off the heat accordingly.

Finally before you take it off the heat add roasted cashews, raisins, salt and a pinch of cardamom powder.
