Ingredients:
Moong dhal - 1/2 cup
Rice - 1/2 cup
Carrot - 1 diced
Beans - few diced
Radish - 1 diced
Green peas - 1/4 cup or less
Brinjal - 1 diced
Drum stick - 1 diced
Onion - 1 medium sized diced
Tomato - 1 medium sized diced
Oil - 1 tablespoon
Ghee - 1 tablespoon
Mustard seeds - 1/4 teaspoon
Jeera - 1/4 teaspoon
Curry leaves - few
Coriander leaves - few chopped
Water - 2 1/2 cups
Sambar powder - 1 teaspoon
Tumeric powder - a pinch
Salt - as per taste
This is one of the easiest dish you can put together. My husband loves this dish and even makes this on his own when I am not there. Yes, its that simple.
I have given a list of vegetables that tastes good, however you may add or drop any. I have used moong dhal when compared to the toor dhal that is generally used, is to make this dish even simpler.
Wash and soak moong dhal & rice in a bowl for at least 15 mins.
In a pressure cooker, warm up 1 tablespoon of oil and add mustard seeds & jeera. Once it starts spurting add in the curry leaves & diced onions. Saute it till the onions turn pink. Then add in all the diced vegetables along with tomato. Add sambar powder, tumeric powder and salt to the vegetables. Mix the masala well and pour in 2 and half cups of water.
Wait till the water warms up and then add in the soaked rice & moong dhal. Put it on pressure cooking for at least 3-4 whistles. Let the pressure die down by itself and then 1 tablespoon of ghee and mix well. Garnish it with chopped coriander leaves.
This dish tastes yummy with fried potato curry.
