Ingredients:
Cooked rice - 1/2 cup
Milk - 2 cups
Sugar - 1/2 cup ( you may adjust it based on your liking)
Cardamom powder - 1/4 teaspoon
Ghee - 1 tablespoon
Cashews - 4
Raisins - 4
Salt - a pinch
In a heavy bottomed pan add in the ghee and roast cashews & raisins. Keep this aside.
In the same pan, pour in 2 cups of milk and bring it to boil and reduce the heat to low. Now add in the cooked rice and sugar. Stir all together till the sugar melts completely. You may add in a pinch of salt as this will enhance the sweetness.
Since the rice is already cooked, you may only have to wait till the milk thickens. It might take about 10-15 mins. Finally add in the cardamom powder. Serve it with roasted cashews & raisins.
I learnt this recipe from my system who generally makes this dish with the left over rice from the previous day. This is her take on arisi payasam as it quick and easy and yet delicious.
