How to make easy tomato curry?

Ingredients:
Tomato - 2 medium sized
Onion - 1 medium sized finely chopped
Chilli powder - 1 tablespoon
Coriander powder - 2 tablespoon
Tumeric powder - 1/4 teaspoon
Salt - To taste
Oil - 2 tablespoon
Mustard seeds - 1/2 teaspoon
Curry leaves - few
Coriander leaves - few finely chopped

In a kadai add oil and let it warm up.Add mustard seeds, curry leaves and onion once oil is warm. Saute for 5 mins or till the onions turn pink/transparent. Add in the chopped tomatoes and saute till it turns mushy. To this add the chilli powder, coriander powder, tumeric powder and salt. Keep stirring the curry till oil separates, it might take about 5-7 mins.

You may pair this with plain white rice, chappathi, idli, dosa, kara paniyaram...the list is endless. This is an easy yet tasty curry that works well with any dish. I cook this when I am not sure what to cook or tired of work or have very little time. It tastes amazing.
