Ingredients:
Cooked rice - 1 cup
Eggs - 2 nos
Onion - 1 medium sized (finely chopped)
Green chili - 2 nos (slit)
Cinnamon - 1 inch bark
Cloves - 2 nos
Cardamom - 1 nos
Oil - 3 tablespoon
Masala powder - 2 tablespoon
Turmeric powder - 1/4 teaspoon
Curry leaves - 4/5 leaves
Coriander leaves - finely chopped
Salt as per taste
In a hot pan add oil and once it warms up, add cinnamon, cloves, cardamom, green chili and curry leaves.While curry leaves splutters add finely chopped onions. Saute the onions till they turn pink. While the onions gets cooked, in a bowl beat the eggs well. Add masala powder, turmeric and salt to the onions and cook for 2 minutes. Now add the beaten eggs to the onions and mix well.
When the eggs are half cooked, add the cooked rice at a low-medium heat. Try to evenly coat the rice with eggs so that the rice gets its flavor.
Once that is done, add chopped coriander leaves and serve hot.
